The avocado plants are prepared in nurseries for 7 months until transported to the orchards. Avocado trees are ready for their first harvest after two years; one tree can produce between 200 and 500 avocados per year. To ensure the highest quality of our La Fresca® avocados, each avocado is hand-picked where the ripening process begins. Since the fruit can stay on the tree for long periods of time without ripening, harvesting can overlap from year to year.

The correct water quantity is vital to ensure a high quality of avocado when harvesting. Avocado trees do not search for water as their roots are shallow in the soil. Due to top layers of the soil being susceptible to drying out quickly as well the tree be intolerant to flooding, an irrigation system is an important aspect of agriculture for better growth, crop output, and nutrition.
