Our guacamole is made using the Hass avocado variety, chosen for its flavour and texture, and grown mainly in Mexico which produces about a third of the world’s avocadoes. Our supplier processes fresh avocado all year round but they carefully monitor the fruit’s oil content and only use fruit with the optimum oil content for our guacamole. Once produced, the finished guacamole goes through a High Pressure Processing (HPP) process, to increase the shelf life and ensure complete food safety without losing any of the fresh flavour and texture, and without needing any additional preservatives. The HPP process involves submitting the packed product to 3000-6000 bars of isostatic water pressure – that’s up to 6 times more water pressure than at the bottom of the world’s deepest oceans!
